INGREDIENTS
- 1 carrot, peeled and chopped
- 20 oz. frozen broccoli florets
- 5 cups fat free chicken or vegetable broth
- 1 cup sharp cheddar cheese, shredded Salt and pepper
PREPARATION
1. Heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook for 5 minutes until tender.
2. Add the broccoli and broth. Bring to a simmer and cook for 10 minutes until broccoli is tender.
3. Turn off the heat and stir in the milk and cheese. Stir continuously until cheese melts. Blend half of the soup and add it back to the pot. This creates a creamier consistency.
4. Season with salt and pepper.
